We had a pretty busy weekend around here. As a matter of fact, our social lives have been so active it is like an episode of keeping up with the Kardashians. Friday night we went to a small going away party for a friend and Saturday night I had a couple of girl friends over for a girls’ night in. It was fun catching up. Anyway, just to make things a little nicer, I prepared a few appetizers. It was sort of a menu test drive for a baby shower I am hosting in a few months. I attempted to make lava flows, a delicious Hawaiian drink. It is sort of like a piña colada, only better. It didn’t turn out as good as the ones I have had before, but it was still enjoyable.
Lava Flow
- 1 oz. light rum
- 1 oz. Malibu® coconut rum
- 2 oz. fresh or frozen strawberries
- 1 small banana
- 2 oz. unsweetened pineapple juice
- 2 oz. coconut cream
Blend the 2 rums and the strawberries in a blender to form a smooth paste. Pour this mixture into a tall (Collins or Hurricane) glass. Rinse the blender. Blend the banana, the coconut cream, and the pineapple juice in blender with crushed ice until smooth. Pour this mixture into the glass with the rums very slowly and watch as the strawberry mixture oozes its way to the top along the sides of the glass creating the flowing lava effect. Garnish with a pineapple wedge and paper umbrella.
